I try to eat healthy–it doesn’t always work. Normally,my biggest set-back is I get tired of eating the same thing over and over. This recipe is unlike my other healthy recipes, and really helps break-up all the chicken and turkey recipes I tend to make. My mom found this recipe and sent it over because she figured my husband would love it, but we both ended up loving it! It tastes so fresh, and is great on crackers or just by itself! Here’s the recipe:
Ingredients:-16 oz of lump crab meat (Trader Joe’s has this for $10!)- 1 pint of grape tomatoes cut in half- 1 diced avocado – 2 jalapeños diced- 1 1/2 cups of roasted corn kernels- 1/4 of a medium-sized red onion (diced)- Juice from 2 limes- 1 tsp of olive oil- Salt and pepper to taste For the roasted corn kernels, I used a frozen bag from Trader Joe’s. Follow the instructions on the bag and cook the corn in the microwave. I did this first, and then placed the corn in the fridge so that when I mixed in the corn at the end it would be cool like my other ingredients.
Next mix your onion, lime juice, and olive oil in a bowl together. The olive oil and lime juice will help mellow out the onion.
Then cut the tomatoes in half and add to the onions.
Next, de-seed your jalapeños, and finely dice. Add this to the bowl.
Then add your diced avocado.
Finally, add the crab meat, your chilled corn kernels, salt and pepper, and you’re done! You have a fantastic fresh salad that is a cinch to mix up! Enjoy!
